1 can Cheddar Cheese soup
1 can (16 oz.) tomatoes, drained & chopped
1 (10 oz.) pkg. frozen chopped spinach
1/2 cup sliced onion
1 Tbs. chopped fresh parsley
1/2 teas. lemon juice
1/2 teas. marjoram
1 clove garlic, minced
pepper to taste
2 cups shredded Swiss cheese, divided
4 cups thinly sliced potatoes
Preheat oven to 375 degrees. Spray a 2 quart casserole pan. In large bowl,
stir together all ingredients except 1/2 cup cheese and the sliced
potatoes. In casserole pan, layer sauce alternately with potatoes,
beginning and ending with the sauce. Cover; bake one hour and 10 minutes.
Uncover; sprinkle with reserved cheese. Bake an additional 15 minutes. 6
servings.
