Baked Mashed Potatoes
3 lbs. (about 12) potatoes, peeled, cubed
½ cup milk
8 ozs. Cream cheese, softened
2 eggs, beaten
¼ cup butter, softened ¼ cup chopped onion
½ cup sour cream 1 teasp. Salt
1/8 teasp. Pepper
Cook potatoes in water to cover in saucepan until tender; drain. Combine with
cream cheese and butter in mixing bowl; beat until smooth. Mix sour cream, milk,
eggs & onion in bowl. Add to potatoes with salt and pepper; beat until fluffy.
Mixture will be runny, place in greased 9-inch round casserole. Bake at 35o
degrees for 45 minutes or until light brown. May chill overnight before baking.
Yield: 10 servings.
