2 medium onions -- chopped
8 yellow squash -- sliced
8 butter crackers -- crushed
salt and pepper -- to taste
1/2 cup melted margarine
4 eggs -- separated
2 cups grated American cheese
Steam onions and squash until tender; drain. Mix in cracker crumbs, salt,
pepper, margarine, beaten egg yolks and cheese. Fold in stiffly beaten egg
whites. Bake in greased 9 X 13-inch pan at 350 degrees for 45 minutes or until
set.
