Sausage Stuffed Zucchini

1/2 lb. sweet Italian sausage, crumbled
1/2 lb. ground beef
1 onion, chopped
1/2 cup dry bread crumbs
1 rib celery, chopped
1 Tablespoon fresh parsley, chopped
1/4 teaspoon pepper
4 large zucchini, halved lengthwise and seeded
1 can (8 oz.) tomato sauce
1 egg
In skillet over medium heat, cook sausage and beef until browned and cooked
through. With slotted spoon, remove sausage and beef to large bowl. Discard
all but 1 Tbs. drippings. In same skillet, heat drippings. Add onion and
celery, cook 2-3 minutes. Transfer to bowl with meat. Stir in bread crumbs,
egg, parsley and pepper until well combined. Place zucchini on baking
sheet, fill evenly with meat mixture. Spoon tomato sauce over zucchini;
cover with foil. Bake at 375 degrees for about 30 minutes.
