4 medium potatoes, peeled and sliced
4 Tbsp. melted margarine
1 tsp. salt
1/4 tsp. paprika
1/4 tsp. pepper
1 {10oz} pkg. frozen broccoli spears, thawed
Pimento Cheese Sauce
Place potatoes in a greased 9x13 inch baking dish. Mix margarine, salt,
paprika and pepper. Brush potatoes with margarine mixture. Bake uncovered
at 425 degrees for 45 min. Arrange broccoli over potatoes and pour Pimento
Cheese Sauce over vegetables. Cover and bake 10 minutes or until broccoli
is tender.
Pimiento Cheese Sauce
3 Tbsp. margarine
1 Tbsp. flour
1 1/2 cup milk
1 cup Cheddar cheese
1/4 cup chopped pimiento
1/2 tsp. salt
1/4 tsp. pepper
Melt margarine and stir in flour; cook until bubbly. Gradually add milk,
stirring until smooth and thickened. Add cheese, pimiento, salt and pepper.
Stir until cheese melts.
