Serves 4
2 cups water
1 cup quick-cooking barley
1 tsp salt
3 Tbl unsalted butter
1 lb zucchini, trimmed, coarsely grated
1/4 tsp freshly ground pepper
In saucepan, bring the water to a boil. Add barley & 1/2 tsp of the salt.
Reduce heat; cover and simmer 10 min. until tender. Remove from heat. Let
stand, covered.
In large skillet over medium heat, melt butter; stir in zucchini, remaining salt
& pepper. Raise heat to high; cook 5 min. stirring until zucchini is softened.
Add barley to zucchini. Cover skillet; keep warm.
