Ingredients :
30g butter
4 medium carrots, sliced
1 onion, sliced
3 cups hot chicken stock
salt and pepper to taste
generous pinch cayenne pepper
6 tablespoons cream chopped parsley to garnish
Cooking Instructions :
1. Melt butter in a saucepan, add carrots and onion, cook gently for about 10 minutes.
2. Add 2 cups chicken stock and bring to the boil.
3. Reduce heat, cover and simmer for 10 minutes.
4. Puree this mixture then return it to saucepan, and heat gently with remaining stock.
5. Season with salt, pepper and cayenne, then stir in the cream. Sprinkle with chopped parsley before serving.
