Enjoy Mexican flavors in this easy beef and bean soup.
Nonstick spray coating
1/2 pound boneless beef round steak, cut into 1/2-inch cubes
1 cup chopped onion
1 clove garlic, minced
2 cups water
1 14-1/2-ounce can tomatoes, cut up
1 cup chopped carrot
1 8-ounce can kidney beans, drained
1/2 cup chopped green pepper
2 tablespoons tomato paste
1 tablespoon chili powder
2 teaspoons instant beef bouillon granules
1/4 teaspoon pepper
Spray a large saucepan with nonstick spray coating. Preheat over medium-high
heat. Add beef, onion, and garlic. Cook and stir about 3 minutes or until
meat is brown.
Stir in water, undrained tomatoes, carrot, beans, green pepper, tomato
paste, chili powder, bouillon granules, and pepper. Cover and simmer about
30 minutes or until meat is tender. Makes 5 servings.
