Cool Avocado Soup
Chilled soups, such as this creamy green specialty, help
take the edge off sweltering summer days.
2 ripe avocados, halved, seeded, peeled and cut up
1 14-1/2-ounce can chicken broth
1/2 of a small onion, cut up
1/2 cup light or fat-free dairy sour cream
1/2 cup milk
Dash paprika
Salt and pepper
Salsa (optional)
1. In a blender container or food processor bowl,* combine avocados, chicken
broth, onion, sour cream, milk and paprika. Cover and blend or process till
the avocado mixture is smooth and creamy.
2. Transfer to a glass bowl. Cover and chill for at least 2 hours. Season to
taste with salt and pepper. If necessary, stir in additional milk to reach a
desired consistency. Ladle into chilled bowls. Garnish with salsa, if you
like. Makes 4 to 6 side-dish servings.
