Minted Honeydew Soup
Serves 4
4 cups cut-up honeydew
1 cup apple juice
1/4 cup fresh mint leaves
In a 2 qt. saucepan, bring the honeydew and juice to a boil over med.-high heat. Reduce heat and simmer 5 min.
Place melon mixture and mint leaves in a blender or food processor container fitted with a steel blade. Cover and process until smooth. (You may have to do this in 2 batches.) Chill.
