Makes 4 servings
1 Roma tomato
1 orange tomato
1 yellow tomato
1 red pepper
1 yellow pepper
1 green pepper
3/4 of a red onion
cilantro to taste
1 quart tomato juice
Tabasco to taste
cayenne pepper to taste
salt and pepper to taste
sour cream for garnish
Clean and dice the tomatoes and peppers, then put them in a food processor
and process until they are in small pieces but you can still see each
vegetable. Dice the onion. Chop the cilantro. Combine the vegetables with
the tomato juice and add the Tabasco, cayenne pepper, salt and pepper to
taste. Add a bit of water to get a pourable consistency, and serve cold,
with a dollop of sour cream and some cilantro for garnish.
