Ingredients...
6 spring onions
1½ oz butter
1 lb new season jersey royal potatoes
1½ oz flour
2½ pts light chicken stock
6 sprigs mint, finely chopped
salt & pepper
Instructions...
Trim and finely slice the spring onions.
Sweat in the butter until the onions soften and
then add the potatoes which have been scraped,
rinsed and finely sliced.
Coat the potatoes with the butter, mixing around
to prevent sticking.
Continue cooking for 5 mins.
Stirring continuously sift in the flour to take up
the fat.
Allow to bubble up and add the stock.
Add half the finely choppped mint.
Bring back to the boil and turn down to simmer for
approximately
10 mins until the potatoes are cooked but not
collapsed.
Season and serve.
