1/2 to 1 lb. mixed beans
1 large onion, chopped
1 (28 oz.) large can tomatoes
1 tsp. chili powder
1 tbsp. lemon juice
2 ham hocks or 1 ham bone or tag end
of ham from deli
Soak beans overnight in large pot covered with. (I
add 2 tsp. baking soda to the water to remove
gas). In the morning, drain and rinse.
Add 2 qts. (or more) water and simmer for 3 hrs.
or until beans are tender.
Add remaining ingredients and simmer for another
hour.
As this makes a large pot full you can change it a
bit the second
day by adding leftover veggies or some shredded
cabbage, celery, carrots, etc.; add more water if
needed.
Should make at least 12 large servings.
