Split Pea Soup For Fifty

Soak 4 pounds split peas overnight, drain and add
7 quarts boiling water
1 pound bacon ring or ham bone
1 cup chopped onion
6 tablespoons salt
1 teaspoon pepper
1 teaspoon liquid smoke
Cover and boil until peas and onions are tender.
Put through a coarse sieve, then add enough water
to make 8 quarts.
Brown 2 pounds crumbled hamburger in drippings or
cooking fat until done.
Add the hamburger, heat and stir in 13 cups
evaporated milk.
Serve hot but do not boil.
Serves 50.
