2 T chicken fat
2 eggs, slightly beaten
1/2 c Matzo meal
2T water or ch broth
fresh chopped parsley
grated carrot
thinly sliced celery
Mix fat and eggs together. Add Matzo meal and mix
together.
When blended, add the stock or water, mix. Then mix in the
parsley. Some people use dill instead.
Cover and refrigerate for at least couple hours or so. You
want it firm enough to roll into small balls, or whatever size ball
you prefer.
I put 3 cans of Swanson's chicken broth in a pot with
however much carrot and celery you want and bring it to a
boil.
Add your Matzo balls, cover and simmer at a soft boil for
about 40 minutes. You might have to add more chicken broth.
