4 pairs chicken feet
4 pounds stewing chicken
1 large carrot
1 large onion
4 stalks celery
1/2 each Bay leaf
6 each peppercorns
9 cups water -- cold
Wash feet and cut off claws.
Lay feet in shallow pan and pour boiling water over them to
cover.
When cool, skin the feet. Put all the ingredients in a
stewing
pot and bring to a boil.
Reduce heat and simmer until chicken and vegetables are
tender.
Remove the meat and save for another dish. [or skin, remove
from
bones, dice and add back to the soup just before serving].
Strain the soup and, if necessary, reduce for a stronger
consistency.
This soup will chill to a firm jelly.
