Cream of Spinach Soup with Cheese
Cream of Spinach Soup with Cheese

1/4 cup boiling water
2 cups frozen spinach
1/4 cup finely chopped onion
4 tbsp. butter
4 tbsp. flour
4 cups milk
1 tsp. salt
a dash of Accent (optional)
grated Provolone cheese for garnish (helps make the soup)
Add water to the spinach and allow to stand until spinach is heated through.
Put through a blender. Brown onion in the butter and stir in the flour.
Cook until bubbly, add the milk, stirring rapidly until thickened. Add
spinach, salt and Accent. Let stand at least 15 mins. When serving put a
tsp. of coarsely grated Provolone cheese on top. Provolone is the catch.
