3 large onions, thinly sliced
1 clove garlic, minced
1/4 cup butter
4 cups vegetable broth
4 thick slices French bread
4 oz. Swiss cheese, sliced
Grated Parmesan cheese
In covered pan, cook onions and garlic in butter over low heat 20 minutes or until very tender. Stir occasionally. Add broth and 1/4 t. pepper. Bring to boil. Cover. Simmer 15 minutes. Meanwhile, toast bread. Arrange slices on baking sheet. Top each with sliced cheese. Sprinkle with Parmesan. Broil 2 to 3 minutes or until cheese melts. Ladle soup into 4 bowls. Top each with a toast slice.
