Tangy Potato Soup
2/3 c. butter
2/3 c. flour
6 c. milk
1 cup bacon, cooked and crumbled
salt and pepper to taste
4 lg. baked potatoes
1 c. sour cream
5 oz. cheddar cheese, grated (here again I go with a white cheese)
4 green onions, chopped
In a large soup pot, melt the margarine. Stir in flour; heat and stir
until smooth. Gradually add milk, stirring constantly until thickened.
Add potatoes and onions. Bring to a boil, stirring constantly. Reduce
heat; simmer for 10 minutes. Add remaining ingredients; stir until
cheese in melted. Serve immediately.
