Pumpkin Soup
1/2 cup chopped onion
2 tbsp. butter or oil
1 1/2 cups chicken broth
1 1/2 cups canned pumpkin
1 tsp. salt
1 1/2 milk or cream -- to 2 cups
pepper and garlic powder or salt to taste
Sauté onion in hot butter until onion is tender, but not brown. Add
chicken broth, pumpkin and salt. Stir and bring to a boil. Simmer 2
minutes. Add milk, pepper, garlic powder or salt to taste. To serve hot,
reheat without boiling or chill until icy cold. Serve. Garnish with
parsley or chives.
