Pork & Hominy Stew
12 oz. boneless pork strips for stir frying
1 lg. onion, chopped
2 cloves garlic, minced
1 T. cooking oil
4 c. chicken broth
2 med. carrots, thinly sliced
1/4 t. ground cumin
1/4 t. crushed red pepper
1 (14 1/2 oz.) can hominy, drained
3 T. snipped fresh cilantro
In a lg. saucepan cook pork, onion and
garlic in hot oil until pork is brown.
Remove pork mixture from saucepan;
set aside. Add chicken broth, carrots,
cumin, and pepper to saucepan. Bring
to boiling; reduce heat. Simmer,
covered, about 8 min. or until carrots
are just tender. Add hominy, cilantro,
and pork mixture; cook and stir until
heated through. Makes 4 servings. (6 c.)
