Oriental Pork Soup
1/2 c. soy sauce
1 T. Dijon style mustard or 1 t. hot Chinese mustard
1/2 lb. lean pork loin, cut into 1/4" strips
1 T. veg. oil.
1/8 t. grated fresh gingerroot
6 c. chicken broth
1/2 c. peeled, sliced carrots
3/4 c. sliced fresh mushrooms
1/4 c. sliced green onions
Mix together soy sauce and mustard. Add the pork strips, stir to coat and marinate for 20 min.
Remove the pork strips from the marinade and pat dry with paper towels. Heat oil in a med. saucepan.
Add the pork and ginger and cook, stirring constantly for 3 to 4 min. or until the pork loses its pink color. Remove pork from the pan. Add the chicken broth to the pan and bring to a boil. Add carrots, reduce heat and simmer until carrots are tender, about 10 min. Add mushrooms, green onions and pork and simmer for an additional 2 min. Serve immediately. Makes 6 servings.
