Southwestern Vegetable Soup
2 lbs. ground beef
1 med. onion, chopped
2 15-oz. cans chili beans, undrained
2 14 1/2-oz cans beef broth
15 oz. can hominy, rinsed and drained
15 oz. can whole kernel corn, drained
14 oz. can Mexican-style stewed tomatoes
10 oz. can diced tomatoes and green chilies, undrained
4 oz. can chopped green chilies
In a Dutch oven or soup kettle, brown beef and onion; drain. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes.
Makes 3 1/2 quarts
