Corn and Pepper Chowder
10 ounce canned condensed cream of celery soup
1 teaspoon chili powder
1/2 cup corn kernels, canned or frozen, thawed
1/4 teaspoon freshly ground black pepper, or to taste
1 - garlic, finely chopped
1/2 teaspoon ground cumin
1/2 each red bell pepper, small, finely chopped
1/4 teaspoon salt, or to taste
1/4 cup scallions, chopped
1 1/2 cup skim milk
Preparation - Estimated cooking time: 15 Min -
1 In a dry, heavy-bottomed saucepan, stir chili powder, cumin and
garlic over medium heat until fragrant, 1 to 2 minutes. Add corn and
peppers and toss to coat.
2 Add soup and milk; stir until heated through. Stir in scallions and
season with salt and pepper.
