Italian Sausage Soup

1 1/4 pounds Italian sausage
3 tablespoons olive oil
1 1/2 cups celery, coarsely chopped
1 1/2 cups onion, coarsely chopped
1 garlic clove, minced
2 cups plum tomatoes, chopped
1 cup tomato puree
6 cups chicken broth
1/2 teaspoon oregano
2 each bay leaves
1/2 teaspoon thyme
1/2 cup parsley, chopped
3 tablespoons sugar
1 cup orzo (rice-shaped pasta)
Grated parmesan for garnish
Remove sausage from casings and crumble into a large soup pot. Saute until
browned. Remove from pot and discard any fat.
In the same pot, heat the olive oil and saute the celery, onions, and garlic
until barely tender. Add the drained tomatoes, puree and browned sausage.
Cook for 10 minutes over medium heat. Add the broth, herbs and sugar and
simmer for 30 minutes. Add the pasta and continue cooking until it is just
done.
Serve with parmesan cheese.
Yield: 6 servings
