1/4 lb. suet, finely chopped OR 3 to 4 T. cooking oil
6 lb. lean beef, cut into 1/2" cubes
1 cup chili powder
2 T. ground cumin
2 T. ground oregano
1 T. salt
1 to 2 T. cayenne pepper
4 cloves garlic, minced
2 quarts beef broth and/or water
1/2 cup finely ground cornmeal
1/2 cup cold water
If using suet, fry it in a large chili kettle until crisp. Add beef to hot fat, 1 pound at a time; cook and stir until browned. Remove and repeat with remaining beef. When all meat is browned, return it to the kettle. Add seasonings and beef broth. Cover and simmer 1 1/2 to 2 hours. Skim fat if needed. Combine cornmeal with cold water and stir into chili. Simmer 30 minutes, stirring occasionally.
Makes 10 to 12 servings
