| Recipes - Soup Recipes |
1 teaspoon olive oil
1 large onion, chopped (about 1 cup)
2 cans (16 ounces each) black beans, with their juice
1 can (8 ounces) tomato sauce
1/2 teaspoon dried oregano leaves
1/8 teaspoon cayenne pepper (optional)
1/2 cup (2 ounces) cubed lean smoked ham
In 1-quart microwave-safe dish with lid, pour in 1 teaspoon oil and 1 cup
chopped onion. Microwave on high for 1 minute. Stir in the 2 cans black
beans, with their liquid, the 1 can tomato sauce, the 1/2 teaspoon dried
oregano, and 1/8 teaspoon cayenne pepper, if using. Cover with lid and
microwave on high 8 to 10 minutes, or until heated through. Remove the dish
from the microwave and stir in the 1/2 cup chopped smoked ham.
