1 lg onion, chopped
2 Tbsp margarine or butter
2 cups chicken broth, homemade or canned
1/4 cup white wine
4 cups diced zucchini, washed but not peeled
1/2 tsp salt
1/8 tsp celery salt
1/2 tsp pepper
1/8 tsp garlic powder
1/4 cup fresh parsley, washed but no cut
2 Tbsp sour cream
In a saucepan, saute the onion in the butter 'til tender. Add all of the
remaining ingredients except the parsley and cook over low heat for 15
minutes, or until zucchini is tender. Pour into blender, half at a time, and
add parsley while blending. If soup is too thick, additional chicken broth
or heavy cream may be added. Heat through and serve with a dollop of sour
cream. Serves 6.
