(Cuban shredded beef)
Serves: 6 – 1 ¼ cup serving
1 large onion, sliced into thin rings
1 large green bell pepper, seeded and thinly sliced
2 celery stalks, thinly sliced
2 cloves garlic, minced
¼ cup red-wine vinegar
2 tablespoons Worcestershire sauce
½ - 1 teaspoon ground cumin
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 can Rotel tomatoes or canned diced Mexican style tomatoes
1 (2 pound) flank steak
½ cup chopped fresh cilantro – or more to taste
Combine first ten ingredients in a large bowl.
Transfer half of the mixture to a 5 – 6 quart crock pot.Place the flank steak on top; spoon the remaining vegetable mixture over the steak.
Cover and cook until steak and vegetables ate fork tender, 5 – 6 hours on HIGH or8 - 10 hours on LOW.
Transfer steak to a cutting board.
With two forks, shred steak into small pieces.
Return to crock pot; stir in cilantro.
