1 can (28 oz.) whole peeled tomatoes, undrained
1 can (15 oz.) garbanzo beans, rinsed and drained
2 zucchini, thinly sliced
1 onion, chopped
2 carrots, peeled and thinly sliced
2 celery ribs, sliced
1 red bell pepper, chopped
1/3 cup chili powder
1 can (4 oz.) chopped mild green chile peppers, undrained
2 cloves garlic, minced
1 TB dried oregano
2 tsp. ground cumin
1 tsp. salt
In a crock pot/slow cooker, combine all the listed ingredients. Mix well.
Cover and cook on LOW heat setting 6 to 8 hours OR on HIGH heat setting
for 3 to 4 hours.
Serves: 6 to 8.
