Corned Beef and Cabbage for 2

1 small onion, sliced
4 small carrots, peeled and cut into chunks
2 medium potatoes, peeled and cut into chunks
1 (1 lb.) corned beef brisket with spice packet
1/3 cup unsweetened apple juice
2 whole cloves
1 TB brown sugar
1/2 tsp. grated orange peel
1/2 tsp. prepared yellow mustard
2 cabbage wedges
Place sliced onion in a 3 quart crock pot/slow cooker.
Add carrots, potatoes and brisket.
Combine the apple juice, cloves, brown sugar, orange peel, mustard and
contents of
the spice packet; mix well and pour over the brisket.
Cover and cook on HIGH heat setting for 3-1/2 to 4 hours.
Add cabbage; cover and cook for an additional 30 to 30 minutes longer, or
until meat
and vegetables are tender.
Strain pan juices and discard cloves; serve pan juices with corned beef and
vegetables.
Serves: 2.
