Italian Ground Turkey Sandwiches
Ingredients:
2 1/2 pounds lean ground turkey
1/2 cup chopped onion
2 teaspoons minced garlic
1 jar (48 ounce) chunky garden vegetable spaghetti sauce
1 can (6 ounce) tomato paste
1 can (3.8 ounce) sliced ripe olives -- drained
12 french rolls -- split
6 slices mozzarella cheese -- halved
Directions:
Spray large nonstick skillet with nonstick cooking spray. Heat over
medium-high heat until hot. Add ground turkey, onion and garlic; cook
6 to 8 minutes or until turkey is well browned, stirring frequently.
Drain.
In 3 1/2 to 4 quart slow cooker, combine cooked turkey, onion,
garlic, spaghetti sauce, tomato paste and olives; mix well.
Cover; cook on high setting for 2 hours or on low setting for 4 to 5
hours.
To serve, fill each roll with 1/2 cup turkey mixture and half slice
of cheese, cutting to fit.
