Beef for Burritos
Nonstick vegetable or olive oil spray
1 (2-pound) London broil
1 (1. 25-ounce) package taco seasoning mix
1 medium onion, chopped
1 tablespoon white distilled vinegar
1 (4-ounce) can diced green chilies
Preliminaries: Spray inside of slow-cooker with nonstick spray.
Trim fat from meat; rub seasoning mix over both sides of meat. Place meat in slow-cooker;
add onion, vinegar and chilies. Cover and cook on low setting 9 hours.
Remove meat, reserving liquid. Shred meat with two forks. Combine meat with reserved
cooking liquid; stir well. Use meat for burritos.
Yield: 6-8 servings
