Pineapple with Fiery Sugar Dip

1 pineapple
1 cup sugar (ideally moist, fine textured raw sugar, but white will do)
1 1/2 t. salt or to taste
Fresh bird's eye chili peppers, 1 minced and a few whole for garnish (available at Asian markets)
Cut off the pineapple skin, doing your darndest not to take off too much of the tart sweet insides. Slice the pineapple into 2 to 3" wedges and arrange them decoratively around a serving plate, leaving space in the center for the dip. Put the sugar in a mixing bowl and gradually add the salt, mixing thoroughly and tasting along the way, until the salt flavor comes through but does not overpower the sugar. With your hands, mash the chili (be brave: no need for gloves if you don't put your finger in your eye, or someone else's, before you wash up. You want to spread the chili flavor throughout the mix until it's got a seriously hot bite to it. Transfer the mix to a decorative bowl, garnish it with a whole chili or two and place it in the center of the pineapple plate. Your friends won't know what to do with this when they first see it, so show them by dunking a pineapple chunk in the sugar dip. Once one guest takes the pineapple dip plunge, it'll be the talk of the party.
