Banana Dijon Grilled Shrimp

1/2 c Mashed ripe banana
1 tb Lime juice
1 tb Honey
1/4 ts Ground red pepper
1 1/2 lb Large fresh unpeeled shrimp
Vegetable spray
1/4 c Reduced-calorie mayonnaise
1 tb Dijon mustard
1 ts Grated lime rind
8 oz Plain nonfat yogurt
Combine banana, mayonnaise, lime juice, mustard, honey, rind, and
pepper in food processor with steel blade. Process, scraping sides,
until smooth. Spoon into bowl, stir in yogurt. Set aside.
Peel and devein shrimp (about 48), leaving tails on. Thread 6 shrimp
onto each of 8 (10 inch) skewers, piercing through tail and neck of
each shrimp.
Marinade shrimp in 1 cup of banana mixture, turning to coat several
times, for 4 hours in refrigerator. Cover remaining banana mixture
and refrigerate to use as a sauce.
Remove skewers from marinade, discard marinade.
Coat a grill rack with cooking spray; place skewers on grill over
medium- hot coals and. Cook 4 minutes on each side. Serve with sauce.
