Salmon Baked in Filo
about 5 sheets of filo dough per serving
salmon fillets; boneless
olive oil
fine sea salt
freshly ground peppercorns
lime zest
lime juice
green onion, thinly sliced
dried dill weed
about 4 tablespoons melted butter per serving
Zip or cayenne
Remove the frozen filo dough from freezer and allow to thaw as per package directions. In meantime, brush salmon fillets with
olive oil, and sprinkle with sea salt, pepper, lime zest, lime juice, green onion slices, and dill weed. Preheat oven to 350
degrees. On baking sheet with sides, start making the salmon bundles by layering filo sheets, one piece at a time, brushing each
with the melted butter. I use about 5 sheets per bundle, can be varied as to size or shape of fish, cutting the dough sheets to be about double the size of the fish. Bring up the edges, and tie with kitchen string. Sprinkle with a little butter and sprinkle with
Zip or cayenne. Bake for about 20 - 25 minutes, or until nicely browned.
