Red Snapper Scampi
1/4 cup margarine or butter, softened
1 T. white wine
1 1/2 t. minced garlic
1/2 t. grated lemon peel
1/8 t. black pepper
1 1/2 pounds red snapper, orange roughy, or grouper fillets, about 4 to 5 ounces each
Preheat oven to 450. Combine margarine, wine, garlic, lemon peel and pepper in small bowl; stir to blend. Place fish on foil lined shallow baking pan. Top with seasoned margarine. Bake 10 to 12 minutes or until fish begins to flake easily when tested with fork. Makes 4 servings Serving suggestion: Serve fish over mixed greens. Or, add sliced carrots, zucchini and bell pepper cut into matchstick size strips to the baking pan for an easy vegetable side dish.
