Pan-Fried Catfish
2 catfish filets
1/3 cup dijon mustard
1 egg, beaten
1 1/4 cup cornmeal
1/4 cup dried ground ginger
oil for frying (I use olive)
Mix the mustard and egg and slather thickly on the catfish filets. Mix the cornmeal and ginger.
Dip the mustard-covered fish in the seasoned cornmeal.
Saute in the oil until just cooked through (137 degrees F)
