Honey-Lime Marinated Swordfish
2 teaspoons grated lime peel
1/4 cup fresh lime juice
2 tablespoons honey
2 tablespoons olive oil
1/3 cup coarsely chopped fresh cilantro
1 1/2 lb. swordfish steaks
1. In shallow glass baking dish, combine lime peel, lime juice, honey and oil; mix well. Stir in cilantro. Add swordfish, turning to coat evenly. Cover; refrigerate 30 minutes to marinate, turning swordfish occasionally.
2. Heat broiler. Lightly spray broiler pan with nonstick cooking spray. Place swordfish on broiler pan; discard marinade. Broil 4 to 6 inches from heat 8 to 10 minutes or until fish just begins to flake.
