Grilled Catfish
2 pounds catfish fillets, skinless
SAUCE:
2 tablespoons canola oil
1/3 cup lemon juice
1/4 cup onion, chopped
2 tablespoons catsup
2 teaspoon sugar
4 bay leaves, crushed
2 cloves garlic, minced
Pepper to taste
2 teaspoon Worcestershire sauce
Paprika
Place fish in single layer in shallow baking dish.
To make sauce: Combine remaining ingredients, except paprika. Pour sauce over fillets and let stand for 30 minutes, turning once.
Remove fillets, reserving sauce for basting. Place fillets on lightly oiled grill. Sprinkle with paprika. Cook about 4 inches from charcoals for 5 minutes. Baste with sauce. Turn and cook 5-10 minutes longer or until fish flakes when tested with fork.
Recipe may be broiled in oven.
