Fish Saute
4 fillets of sole or orange roughy
3-4 ripe tomatoes (can use canned)
1/2 onion, chopped
3/4 C. white wine
1 clove garlic
2 Tbs. butter
1/4 C. grated Parmesan cheese
Cooked white rice
Lay raw fish on bottom of greased baking dish. Saute tomatoes, onions, mushrooms and garlic in wine and butter for 5 minutes. Pour over fish and top with Parmesan cheese. Bake at 350 degrees F. for 20 minutes. Serve over white rice.
