Fish Fillet Amandine
4 T. margarine
3/4 lb. fish fillets, fresh or frozen
Salt
Pepper
3 T. halved blanched almonds
2 t. lemon juice
Melt 2 T. butter in skillet. Season the fillets with salt and pepper. Sauté quickly until the fish is browned on both sides and flakes easily with a fork. Transfer fish to hot platter. Keep it warm. Melt remaining butter in same skillet and brown the almonds lightly in it. Add the lemon juice to the almonds and pour it all over the fish. Serve at once. Serves 2
