Caprese Grilled Swordfish
Cut the swordfish into thin slices; this makes it easier to cook uniformly and keep moist.
1 pound swordfish, cut into 3/8-inch-thick slices
Fresh lemon juice
Olive oil
Chopped fresh oregano
Salt and pepper
Sprinkle fish with lemon juice, then with oil, oregano and salt and pepper to taste. Let marinate for 30 minutes. Cook on a hot grill for about 2 to 3 minutes per side, making sure the fish stays moist. Serve immediately. Traditionally, the fish is drizzled with oil and served with lemon slices on the side. Makes 3 servings.
