Serves 4
2 Tbl basil-flavored olive oil (or 2 Tbl olive oil w/ 1/2 tsp. dried or fresh
chopped basil)
1 lb peeled, deveined shrimp
1/2 cup dry white wine
2 tsp garlic - finely chopped
12 oz fettuccine
1 cup heavy cream
1/2 tsp salt
1/4 tsp pepper
Garnish
- chopped parsley
- grated parmesan
In 2 Tbl basil-flavored olive oil, marinate 1 lb shrimp for 20 min.
Heat large, heavy skillet over high heat; add shrimp; stir-fry 1 minute, until
just pink. With slotted spoon, remove shrimp. To skillet, add 1/2 cup dry
white wine and 2 tsp finely chopped garlic. Boil 4 minutes, until reduced to 3
Tbl.
Meanwhile, cook fettuccine according to package directions; drain.
To skillet, add 1 cup heavy cream; boil 2 minutes (stirring constantly so it
doesn't stick to the pan). Add shrimp, 1/2 tsp salt & 1/4 tsp pepper; cook
through, 1 min.
In serving bowl, toss with pasta. Top with chopped parsley and grated Parmesan.
