Blackened Cajun Ribs
24 lbs. pork spareribs
3/4 c. paprika
6 T. onion powder
6 T. garlic powder
4 T. black pepper
3 T. salt
3 T. cayenne (ground red pepper)
3 T. crushed thyme
3 T. crushed oregano
Cut ribs into 8 oz. portions. Place ribs in boiling water; simmer covered 45 min.; drain. combine seasonings and sprinkle on both sides of warm ribs, rubbing in slightly. Bake ribs in single layer; Conventional oven at 350° for 45 min.; Convection oven at 300° for 30 min.
until ribs are tender and nicely browned.
Portion size: 8 oz. Makes 24 servings.
