Bean And Rice Casserole
1 lb. bulk pork sausage
2 med. stalks celery, sliced (1 c.)
1 med. onion, chopped (1/2 c.)
2 c. cooked rice
1 can (15 oz.) kidney beans, drained
1 can (16 oz.) whole tomatoes
1 t. dried oregano leaves
1 t. salt
1/2 t. dried savory leaves
1/4 t. pepper
1/2 t. red pepper sauce
1 c. shredded Monterey jack cheese (4 oz.)
Cook and stir sausage, celery and onion in 10" skillet over med. heat until sausage is brown, 10 to 15 min.; drain.
Stir in rice, beans, tomatoes with liquid and the remaining ingredients except cheese; break up tomatoes with fork.
Pour into ungreased 2 qt. casserole.
Cook uncovered in 350° oven 30 min.
Sprinkle with cheese. Cook uncovered
until cheese is melted, about 5 min.
