1 pound boneless pork loin, cut into 16 thin strips
1 11 ounce can mandarin oranges, drained
1 small green pepper, cut into 1/2 inch chunks
1/4 cup reduced sodium teriyaki sauce
1 tablespoon honey
1 tablespoon vinegar
1/8 teaspoon garlic powder
16 Bamboo skewers, soaked in cold water for 20 to 30 minutes prior to assembly
Combine teriyaki sauce, honey, vinegar and garlic powder and mix well. Pour over sliced pork strips in a shallow dish and marinate in the refrigerator. Thread pork strips, accordion-style on to skewers, alternating mandarin oranges and green pepper pieces before re-threading pork strips. Remaining marinade can be used during cooking only. Broil for 5 to 6 minutes, turning and basting frequently.
Makes 8 servings.
