Blueberry-Cream Cheese Pie
Blueberry-Cream Cheese Pie

1 (8-oz) pkg. cream cheese, softened
1/4 c sugar
1/4 c sour cream
1/2 t vanilla extract
1 baked 9-inch pastry shell
1 c fresh blueberries
1/2 c water1/2 c sugar
2 T cornstarch
1 T lemon juice
1 1/2 c fresh blueberries
1 (8 oz) whipped cream
1 (3.2oz) instant vanilla pudding
grated nutmeg
Combine first 4 ingredients; beat at medium speed with electric mixer
one minute or until smooth. Spread mixture into baked pie shell,
cover and chill one hour.
Place 1 cup blueberries into small saucepan, add water and bring to a
boil. Reduce heat and simmer 3 minutes. Combine 1/2 c sugar and the
cornstarch, stir into berries. Bring to a boil, stirring constantly
for 1 minute. Stir in lemon juice, cool.
Place 1-1/2 cup blueberries over cream cheese mixture, pour glaze
over top. Chill 2 to 3 hours.
Combine whipped cream and instant vanilla pudding and spread over
cooled pie. Sprinkle with nutmeg and garnish with blueberries.
Yield: one 9-inch pie
