Apple Cream Pie
Crust
1-1/2 cups flour
1/2 cup shortening
1 tsp. salt
3 tbsp. ice cold water
Filling
4 - 5 apples, peeled, thinly sliced (any green apples)
2 egg yolks, or an egg substitute equivelent to 2 eggs
4 tsp. sugar
1/2 tsp. vanilla extract
2/3 cup heavy cream
Apricot Glaze
3/4 cup apricot jam
3 tbsp. water
Directions
Preheat oven to 375° F. Mix flour, salt and shortening
together, cutting shortening into flour until mixture looks crumbly.
Add ice cold water 1 tbsp. at a time, cutting mixture with a pastry
cutter, or 2 butter knives. Continue until all water is mixed. It
is important not to work dough too much, or it will toughen.
Roll dough out on floured board, and line pie pan. Flute
sides of crusts while pinching up diagonally. Arrange apple slices in
concentric circles around bottom of crust.
Bake for 20 minutes.
Meanwhile, in a bowl, mix egg yolks, sugar and vanilla
extract.
Fold in cream. Remove pie from oven. Cover with cream mixture.
Return to oven for 20 minutes or so, or until top is golden
brown. Let stand for 10 minutes. Brush with apricot glaze after
baking.
