Glazed Raspberry Pie
5 c fresh raspberries divided
1 c water
1 c sugar
3 TB corn starch
2 TB lemon juice
1 3 oz pkg cream cheese softened
1 TB butter or margarine softened
1 TB milk
1 9 inch pastry pie crust baked
In a saucepan combine 2/3 c berries and 2/3 c water and simmer
uncovered for 3 minutes. Strain berries and discard seeds.
Set juice aside.
In another saucepan combine sugar, corn starch and remaining water
until smooth. Add berry juice and bring sauce to a boil over medium
heat stirring for 2 minutes or until thickened. Remove from heat and
stir in lemon juice. Cool.
In a small mixing bowl beat cream cheese butter and milk until
smooth. Spread cheese mixture on the bottom and up the ides of the
pie shell. Fill shell with remaining berries then slowly pour
prepared glaze over the berries. Refrigerate until serving.
